Well it is Friday again! It looks like I will be spending another weekend without my husband. He is now in KY still working on storm trouble. It may be a couple of weeks before he returns.

Payton just doesn't understand why her daddy isn't coming home. She knows he is working and she talks to him a couple of times a day but she still asks everyday on the way home if daddy will be there.

Tasty Tuesday - Skillet Chicken Parmigiana

Ingredients:

4 - Boneless Chicken Breasts

1/3 Cup Italian Style Dry Bread Crumbs

1/3 Cup Grated Parmesan Cheese

1 Egg, Beaten

2 Tbsp. Olive or Vegetable Oil

2 Cups - Spaghetti Sauce

1/2 Cup Shredded Mozzarella Cheese

Mix bread crumbs and Parmesan cheese. Dip chicken in egg then coat with bread crumb mixture. Heat oil in 12 in skillet over medium heat. cook chicken in oil 10 to 15 minutes. Turning once. Pour spaghetti sauce around chicken in skillet until hot. Sprinkle mozzarella cheese over chicken. Serve over spaghetti noodles.

My husband loves to cook and he found this recipe and made it last weekend and it was great. I was very impressed!
